

Sometimes I think the nordic winters will never stop, and I live in a fairly good part of Sweden. With only 3-4 month of cold, snowy periods. But still it’s the darkness… I call it Gotland gray, a misty, gray weather with little to no sunshine for weeks. But the hope is slowly coming, and the early seedlings are growing in my office, waiting for the warmth to come back.
I have a lot of seedlings growing in my office already. Both cress and mustard for my sandwich, but also chili, paprika, different types of cabbage and even a few aborigine and cucumber is coming up in there.
Last weekend I could actually go out to the veggie garden, and put manure from the chicken cup in the ground. Its so satisfying to work with a shovel for a couple of hours.
I have also have som health trouble going on this winter, and it can probably be traced down to stress. So I have decided to go totally vegan, and have been watching a lot of whole food plat-based documentaries on YouTube lately. Learning how to make my own tofu from scratch was so much fun, and it tastes so much better than the store bought ones. And it’s so easy to do. Takes a lot of time, but when working with a mindful mindset it is good for the soul. Down to only two small cups of coffee a day, (and I work in Swedish healthcare who are famous for large quantities of coffee a day) replacing it with homemade chai tea, and the stress levels are going down. Hopefully I´ll start to se progress soon.
